Product info
Limestone or gypse, in catalan. Which looks more like the soils of Jerez than any other part of the Priorat denomination.
This top cuvée of estate is a blend of Macabeu, PX (back to Jerez!) and grenache blanc.
Vinification
The grapes are pressed in an old vertical press. The bunches are first foot trodden for one hour, then the press delicately finishes the job.
During the process, there is interaction between extraction, oxidization and maceration, hence the particular expression of this wine.
The it is aged for 2 years in big vats, of which 1 year on its lees.

Best decant before serving in a large Burgundy glass, around 14°C.
Trial analysis
Golden colour. Complex on the nose, spicy and mineral with a hint of positive oxidization.
Salty and very Mediterranean on the palate. Superb!

They shortened the élevage of the white 2021 Pedra de Guix to 11 months, and they also stopped using the 1,800-liter foudre, where the wine partially aged in the past, and now it's matured in concrete vats (diamond-shaped ones!). The wine is floral, vertical and a lot less oxidative than even the 2019, which is less oxidative than previous years. It's a different profile of wine with very good depth and freshness. Funnily enough, this 2021 has a little more alcohol than the 2019 (13.5%), but the wine feels lighter on its feet. 4,008 bottles produced.

This cuvée is currently the only wine made out of Montanega (a variant of Parellada coming from Selma (El Pal de Manlleu), a small village in the Montmell hills). This is the project of Ester Nin and her brother, who originate from the place. The vines are planted on red clay soils (hence the name Vermella). There are cultivated biodynamically. A rare, classy and very Mediterranean wine.
