El Bierzo was one of the first Spanish denominaciones to get a completely new set of specifications, introducing (from 2017 onwards) the vino de villa for wines made with grapes originating from one village. A list of villages has been issued.
Some producers already use these names, including our suppliers. A good example of "vino de villa" is Valtuille.
Vinification
The grapes are transferred in whole bunches into 5000 litre open vats.
Only Indigenous yeasts are used for the fermentation.
The maceration takes place in a tank where most and cap mingle during 60 days.

Trial analysis
Nice cherry red colour.
Floral and fruity notes on the nose, but no overwhelming wood notes.
A lot of elegance on the palate, this medium bodied wine has very silky tannins.
