The "Les Filles d'Amelia" line was created by Pablo as a tribute to his mother.
Like the rosé "Les Prunes", this sparkling cuvée Les Danses is made with Manso.
It is a Méthode ancestrale, refermenting naturally in the bottle.
And also a rosé.
Vinification
As its name says, the Méthode Ancestrale is a very old method for making sparkling wines.
Unlike with the Traditional or Champenois Method, no liqueur d'expédition is added so the second fermentation takes place spontaneously. It is more risky, and there is no disgorgement, which explains that the wine may not be completely limpid.
It is a blanc de noirs, from the typical Mando red grape, but in rosé.
the bottes were left on racks to age for 24 months.

Trial analysis
No liqueur added, so it is a brut nature.
Nice old-rose colour; seductive on the nose (flowers, raspberries). Juicy and Creamy on the palate, with a hint of residual sweetness.Only 10,5% of alcool, so easy to drink. A very original sparkling winel.

Wine estate

Celler del Roure is nothing short of the pioneer of quality wine in the DO Valencia.
Until recently, Valencia was only known for its cheap bulk wines, but it is now blossoming into one of Spain most interesting wine regions.
Thanks to the estate, which rehabilitated long-forgotten local grapes like the red Mando and the white Verdil, and also rediscovered the use of amphoras.
