History Cérvoles

In Costers del Segre, not only did the Cusiné family give back its shine to Castell del Remei, it also created a brand new estate, which is already among the jewels of the DO. In 1997, after a long quest, the Cusinés bought a nice property in La Pobla de Cérvoles. The vineyard had to be completely reviewed, the idea being to increase the leaf surface and decrease the yield. The winemaking methods were completely changed in order to optimise the quality of the wines. Right from the start, the estate was meant to produce top quality wine – it has recently joined the “Grandes Pagos de España”, an association of wine estates spread all over Spain whose objective is to foster the terroir wine culture – pago is the Spanish equivalent of cru. Beside the top cuvées - Cérvoles blanc and Cérvoles negre, the estate also makes the Estrats, a selection of the best vineyards. Since 2009, Cérvoles has also been marketing the “Colors”, a wine made out of the younger vines.

Varieties Cérvoles

The 36 hectare estate is divided as follows: Chardonnay (6.5 ha), Macabeu (6,5 ha), Cabernet Sauvignon (7 ha), Tempranillo (7 ha), Grenache (4.5 ha), Merlot (3 ha); there are also some experimental blocks of Syrah and Marselan.

Terroir Cérvoles

The vineyards are located at 750 m above sea level. The climate is rather dry. Even if the sea is nearer than from Castell del Remei, it is still too far for its humid breezes to blow here (all the more so as there is Sierra del Montsant and Sierra de Llena in between). The soils are very stony. The mix of clay, silt and pebbles is rather well balanced: it retain enough water to give it back in case of drought, but it also ensures a good drainage. This is good for the vine life cycle. Average rainfall is around 450 mm. During summer, the temperature range between day and night is huge. Vines are located amongst woods and Mediterranean aromatic plants, which may explain the Mediterranean character in the wines.

Vinification Cérvoles

Harvesting is done by hand. All vine blocks are vinified separately. White wines are fermented in French oak barrels. The wine ages there for 8 months, 6 of which is on its lees with bâtonnage. The winemaking of the reds is adapted to each block of vines. A délestage is done to extract more colour and matter, as well as frequent regulated pigeages. Then the wines age for 12 months in French oak barrels. Barrels are renewed every 3 years.

Description

The bush-vine Macabeu planted around 1960, whereas the double-guyot chardonay dates from 1990. As the vineyard is oriented to the South-West, the grapes get a maximum of sunshine and so the ripeness is optimal, all the more so as a green harvest avoids overproduction. The real harvest takes place between mid-September and mid-October. Production: 8.500 bottles.

A blend of Bush-vine Macabeu planted between 1958 and 1960 and Double Guyot Chardonnay pal;ted in 1990. As the vineyard faces South-West, the grapes get a maximal sunshine and reach a perfect ripeness. A green harvest is done some weeks before the harvest as to foster the remaining bunches.

Then the wine is put into Allier oak barrels, partly new, partly 2nd year. A small quantity of the Grenache goes into American oak.
