The new top wine by Berta Garcia, who made wine at Latour and Haut Brion.
The grapes come from within the estate's walls, hence the name of this cuvée, Tras Los Muros, behind the walls.
Vinification
Picked by hand within walls of Pazo Señorans. 100% Albariño, fermented then aged for 6 months in oak barrels, on its lees.
Only a minimal dose of sulphur is added before bottling. As little intervention as possible, so as to let the wine express its varietal and terroir.

To serve
Best decant and serve in a large Burgundy glass between 12 and 14°C.
Trial analysis
Very aromatic on the nose (peach, pear, apricot, fennel), quite wide on the palate, mineral but also smooth. The oak notes will disappear with time.
Long and intense finish.
